So I decided last night I'd make the Chorizo Burgers with Red Onion Marmalade. I really fancied a burger on the barbecue but I still went for the oven/grill option as I prepared everything inside.
Here's Head Chef Patrick's recipe for Chorizo and Pinenut Burgers with Red Onion Marmalade!
This recipe serves 2 people

Ingredients
200g Mince beef
50g Shredded chorizo
2 tbsps Pine nuts
1 baby gem lettuce
2 barfoots sweetcorn
1 cup cherry tomatoes
1 spring onion
1 red onion
3 tsps Balsamic vinegar
1/2 tsp Sugar
1 tsp Ketchup
1 tsp Dry oregano
1 Ciabatta Loaf
Method
- Prepare the cherry tomatoes, baby gem lettuce and spring onion for the salad
- Peel and cut the red onion in half then into thin slices
- Chop the chorizo finely
- Heat 2 tsps of olive oil on a low heat in a pan
- Add the red onion with 1/2 tsp sugar and a pinch of salt and pepper
- Leave for 10 mins then add in 2tsps of balsamic vinegar
- Continue show cooking until the burgers are ready
- Bring a pan of water to the boil then add corn and a pinch of salt
- gently boil for 4 mins, until corn is soft
- Drain and keep aside
- Pre-heat grill to high
- Mix together the mince meat and pince nuts with 1/4 tsp salt
- Then mix in the tsp oregano, shredded chorizo and ketchup
- Work the mixture with your hands, thoroughly for a few minutes
- Divide the mince meat mixture into 2 and gently shape
- Rub with a light coating of olive oil then place on a baking tray
- Grill on the top shelf for 4 mins on each side
- In a bowl, mix together the salad (cherry tomatoes, spring onion and baby gem lettuce)
- Drizzle over the balsamic vinegar and a little olive oil and toss
- Cut the ciabatta in half then through the middle to create two burger rolls
- Put under the grill for a minute on each side
- Serve the burgers with the side salad and corn and top the burger with the red onion marmalade

Oh my god, I can't even explain how delicious these burgers were. They were a little oily/fatty but I believe that was due to the chorizo as the oil was bright orange/red like the chorizo. But other than that. The taste and texture of the burgers were delicious.
You may have noticed that I didn't put the pinenuts in, this is because I lost them! Oh! Go knows how, maybe they were accidentally thrown away. I think if the pine nuts were included then it would have added a lovely crunch texture to the burgers.
The onion marmalade were sweet yet tangy with slightly crunchy, yum!
